Barrita de Piña

When I made the strawberry barrita gigante a lot of people were requesting the other popular flavor of pineapple. I thought to myself how can I reinvent or make it different because I had made the initial one giant. I then realized the actual process and simplicity of this recipe is exactly why I love cooking. It’s not pretentious and high brow. It’s home made curated and fun. So I decided to run with that idea and make the original shape true to its inspiration but so much easier.

3 cups bisquick

1/2 cup sugar

1 egg

1/2 cup warm water

Filling

1 cup pineapple (canned is fine)

1 pack of gelatin

Start by mixing all of your dry ingredients and then incorporating the egg and warm water. The dough will be sticky so at this point add a little more bisquick(a small amount at a time) to get the dough dry enough to roll out.

Roll out into a large rectangle and begin cutting, with a knife, smaller rectangle shapes. Since we are cutting with a knife we should have sharp edges. Fold both the longer sides of the rectangle, like a book, in but not completely. Leaving room for the filling. When you’ve shaped all your shapes carefully move them onto your cookie sheet with a spatula. Use an egg wash to brush the barritas

Bake at 375 for about 8-10 minutes always keeping an eye on them. They bake very fast. Until firm to touch.

For the filling blend pineapple and gelatin together. I used canned pineapples with no added sugar and used the juice it came in to blend the pineapples in. Once blended(with gelatin) add mixture to a medium low flamed pot and add 1 tablespoon of sugar. Cook this until it hits a rolling boil and take it off the flame. We’re basically making jello at this point. Pour mixture onto a plate that has slightly higher curves to keep the filling from spilling. We want an even layer not too thick. Place in the fridge until it’s nice and firm.

At this point your barritas should be baked and cooled the jelly should be firm after a couple of hours. Begin scooping the filling into the center of the barrita and enjoy this classic Mexican treat at home !
