Sponch Cookies

I used to love these cookies growing up as a kid so naturally I was so curious on how to interpret them into something I can appreciate and enjoy eating. Utilizing store-bought items this is an effective way to impress your family and enjoy something tasty.

16oz sugar cookie dough

Cake frosting (I ask the bakery to sell me some)

Coconut flakes

Raspberries

Bake sugar cookies as directed on the instructions. They will bake into circles but when they come out of the oven immediately use the edge of a knife to shape them into squares. It’s important to do this white still hot so they dry in the new shape. Allow cookies to cool completely.

I purchase cake frosting over the counter at my grocery stores bakery. Just like the deli they will actually sell you cake frosting by the weight and place it in a container. I like using cake frosting from the grocery store because these frostings typically have a marshmallow flavor and sometimes marshmallow added into them which is perfect for this cookie.

Separate the frosting and add some pink food coloring into one. Pipe onto each cooled cookie in the classic sponch pattern top with coconut flakes and a raspberry in the center.
